Award Winning Blueberry Muffins Recipe

These muffins won a blue ribbon during the years that I was eligible for the Dade County (Miami, Forida) Youth Fair. I think this particular recipe came originally from the Better Homes and Gardens Cookbook, but I could be wrong.

Makes 12 muffins

1 3/4 cups flour (180 g)
6 Tbsp sugar (70 g)
2 1/2 tsp baking powder (12 ml)
3/4 tsp salt (4 ml)
1 egg beaten
3/4 cup milk (180 ml)
1/3 cup cooking oil (80 ml)
3/4 cup blueberries (120 g)
1 tsp lemon peel (5 ml) (optional)

Preheat oven to 400°F. Stir together the flour, sugar, baking powder, and salt. Make a well in the center.

In a separate bowl, combine the egg, milk, and oil.

Add egg mixture, all at once, to the flour mixture. Stir just until moistened. Yes, the batter should be lumpy. (If you try to stir all the lumps out, your muffins will be very tough.)

Carefully fold in blueberries and optional lemon peel.

Grease muffin cups, or line with paper bake cups; fill each 2/3 full.

Bake at 400°F for 20-25 minutes, or until golden brown. Remove from pans; serve warm with butter.

The less you stir once you've combined the two mixtures, the better your muffins will be. (To a point overmixing is much more common than undermixing.) Frozen blueberries work fine, if you can't get hold of fresh berries. I'm sure other kinds of fruit will work fine, too, but I haven't tried them.

Tips on How to Bake Bread

Now baking bread from scratch is most probably the most time consuming baking process of all baking processes around. I am not saying that bread baking is hard to do but it does consume a lot of time and patience. Ones you made a couple of your own breads and you think seriously of baking more make notes every time you prepare and bake your bread. This way you can look back on how you baked bread before and what ingredients you used or what oven was used at what temperature. Bread baking is very variable, but you can do it correctly time after time simply by paying attention to every thing you do. Professional bakers will alter or add to their formulas all the time just to make sure the best is coming out of the oven each and every time. A different mixer, oven, or even the time of year will change the way they make bread type doughs.

Make sure you will become aware of the variables of your kitchen environment to bake the perfect yeast raised breads, doughnuts and sweet doughs. Like said before there are bakers that make breads from premixed ingredients with which you can bake excellent bread.

If you use a premix or frozen to make your dough you will find the methods of preparation, baking tips, finishing tips, and bread handling tips to be of value. The use of premixed ingredients saves a bit of time and reduces the skills needed to bake the perfect bread. However, if you want more variation in your bread start baking from scratch.
